Description

Ingredients

  • 2 cups Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Red Onion, finely chopped
  • 1/2 cup Black Olives, sliced (optional)
  • 1/4 cup Fresh Parsley, chopped
  • 2 cups Fusilli or Rotini pasta
  • 1 cup Feta Cheese, crumbled
  • 1/4 cup Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Chop the cherry tomatoes, cucumber, red onion, and olives (if using) and set aside in a large mixing bowl.
  3. In a large bowl, combine the cooled pasta with the chopped vegetables and crumble feta cheese on top.
