Ingredients

- 2 cups Cherry Tomatoes, halved
- 1 cup Cucumber, diced
- 1/2 cup Red Onion, finely chopped
- 1/2 cup Black Olives, sliced (optional)
- 1/4 cup Fresh Parsley, chopped
- 2 cups Fusilli or Rotini pasta
- 1 cup Feta Cheese, crumbled
- 1/4 cup Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1 teaspoon Dried Oregano
- Salt and Pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Chop the cherry tomatoes, cucumber, red onion, and olives (if using) and set aside in a large mixing bowl.
- In a large bowl, combine the cooled pasta with the chopped vegetables and crumble feta cheese on top.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the pasta and vegetable mixture, and gently toss to combine. Sprinkle with parsley and serve.
Notes
- For a gluten-free option, use gluten-free pasta.
- Store leftovers in an airtight container in the fridge for up to three days.
