Description
A healthy and refreshing green detox soup packed with nutrients.
Ingredients
Scale
- 2 cups spinach
- 1 cup kale
- 1 medium cucumber, chopped
- 1 green apple, cored and chopped
- 1 avocado
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped cucumber and sauté for 2-3 minutes.
- Add spinach, kale, and vegetable broth.
- Bring to a boil and then reduce heat to simmer.
- Cook for 10 minutes until greens are tender.
- Remove from heat and let cool slightly.
- Add avocado, green apple, lemon juice, and salt.
- Blend until smooth.
- Serve warm or chilled.
Notes
- Adjust salt according to your taste.
- Store leftovers in the fridge for up to 3 days.
