A healthy and refreshing green detox soup packed with nutrients.


Ingredients

Scale
  • 2 cups spinach
  • 1 cup kale
  • 1 medium cucumber, chopped
  • 1 green apple, cored and chopped
  • 1 avocado
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped cucumber and sauté for 2-3 minutes.
  3. Add spinach, kale, and vegetable broth.
  4. Bring to a boil and then reduce heat to simmer.
  5. Cook for 10 minutes until greens are tender.
  6. Remove from heat and let cool slightly.
  7. Add avocado, green apple, lemon juice, and salt.
  8. Blend until smooth.
  9. Serve warm or chilled.
