Ingredients
Scale
- 2 cups cooked chicken, shredded
- 1 avocado, mashed
- 1/2 cup Greek yogurt
- 1/4 cup fresh herbs (parsley, chives, basil), chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 large lettuce leaves
Instructions
- In a bowl, combine shredded chicken, mashed avocado, Greek yogurt, chopped herbs, and lemon juice.
- Season with salt and pepper.
- Mix well until everything is combined.
- Take a lettuce leaf and spoon some chicken salad mixture into the center.
- Wrap the lettuce around the filling tightly.
- Repeat with remaining lettuce leaves and filling.
- Serve immediately or refrigerate until ready to eat.
Notes
- Feel free to add other vegetables like diced cucumber or bell peppers.
- This wrap can be made ahead of time for meal prep.
- Use different herbs based on your preference.
