Grilled apricots topped with whipped goat cheese, thyme, and honey.

- 4 ripe apricots, halved and pitted
- 4 oz goat cheese
- 1/4 cup heavy cream
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- Salt to taste
Instructions
- Preheat the grill to medium heat.
- In a mixing bowl, combine goat cheese, heavy cream, and salt. Whip until smooth.
- Brush apricot halves with honey.
- Place apricots on the grill, cut side down, and grill for 4-5 minutes until caramelized.
- Remove from the grill and let cool slightly.
- Top grilled apricots with whipped goat cheese and sprinkle with thyme.
- Drizzle with additional honey before serving.

- Choose ripe apricots for best flavor.
- Adjust honey based on desired sweetness.
