Description

Grilled apricots topped with whipped goat cheese, thyme, and honey.


Ingredients

  • 4 ripe apricots, halved and pitted
  • 4 oz goat cheese
  • 1/4 cup heavy cream
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • Salt to taste

Instructions

  1. Preheat the grill to medium heat.
  2. In a mixing bowl, combine goat cheese, heavy cream, and salt. Whip until smooth.
  3. Brush apricot halves with honey.
  4. Place apricots on the grill, cut side down, and grill for 4-5 minutes until caramelized.
  5. Remove from the grill and let cool slightly.
  6. Top grilled apricots with whipped goat cheese and sprinkle with thyme.
  7. Drizzle with additional honey before serving.
