Ingredients

- 2 cod fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt to taste
- Pepper to taste
- Lemon wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, garlic, salt, and pepper.
- Brush the cod fillets with the olive oil mixture.
- Grill the cod for 4-5 minutes per side until cooked through.
- In a skillet, sauté spinach and cherry tomatoes until spinach wilts.
- Serve the grilled cod over the spinach and tomatoes.
- Garnish with lemon wedges.
