A simple and healthy recipe for grilled cod served with spinach and tomatoes.
Ingredients

- 2 cod fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 lemon, sliced
Instructions
- Preheat your grill to medium heat.
- In a bowl, mix olive oil, garlic, salt, and pepper.
- Brush the mixture onto the cod fillets.
- Place the cod on the grill and cook for 4-5 minutes on each side.
- In a skillet, sauté spinach and cherry tomatoes until spinach wilts.
- Serve the grilled cod over the sautéed spinach and tomatoes.
- Garnish with lemon slices.

- Adjust cooking time based on the thickness of the cod fillets.
- You can substitute other greens if desired.
