Grilled Lemongrass Chicken is a flavorful Southeast Asian-inspired dish made with juicy, marinated chicken thighs infused with lemongrass, garlic, and a savory blend of sauces. Perfect for BBQs, dinners, or meal prep.

- 2 lbs chicken thighs, boneless and skinless
- 1 stalk lemongrass, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon lime juice
- 2 teaspoons chili flakes (optional)
- 1 tablespoon vegetable oil
- Fresh cilantro leaves for garnish
Instructions
- In a medium-sized bowl, mix chopped lemongrass, garlic, fish sauce, soy sauce, sugar, lime juice, and chili flakes.
- Add the chicken thighs and coat thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, preferably overnight.
- Preheat your grill or grill pan to medium-high heat and brush lightly with oil.
- Place the marinated chicken on the grill and cook for 6–7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
- Remove from the grill and let the chicken rest for a few minutes.
- Garnish with fresh cilantro and serve as desired.
Notes
- Marinate overnight for the best flavor.
- Don’t overcrowd the grill—cook in batches if needed.
- Let chicken come to room temperature before grilling for even cooking.
- Add ginger or Thai basil for extra depth of flavor.
- To make it vegetarian, substitute chicken with firm tofu.
