Description

Grilled Lemongrass Chicken is a flavorful Southeast Asian-inspired dish made with juicy, marinated chicken thighs infused with lemongrass, garlic, and a savory blend of sauces. Perfect for BBQs, dinners, or meal prep.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 stalk lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon lime juice
  • 2 teaspoons chili flakes (optional)
  • 1 tablespoon vegetable oil
  • Fresh cilantro leaves for garnish

Instructions

  1. In a medium-sized bowl, mix chopped lemongrass, garlic, fish sauce, soy sauce, sugar, lime juice, and chili flakes.
  2. Add the chicken thighs and coat thoroughly with the marinade. Cover and refrigerate for at least 30 minutes, preferably overnight.
  3. Preheat your grill or grill pan to medium-high heat and brush lightly with oil.
  4. Place the marinated chicken on the grill and cook for 6–7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
  5. Remove from the grill and let the chicken rest for a few minutes.
  6. Garnish with fresh cilantro and serve as desired.

Notes

  • Marinate overnight for the best flavor.
  • Don’t overcrowd the grill—cook in batches if needed.
  • Let chicken come to room temperature before grilling for even cooking.
  • Add ginger or Thai basil for extra depth of flavor.
  • To make it vegetarian, substitute chicken with firm tofu.
