- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon honey (optional)
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 4 boneless skinless chicken breasts or thighs
- Additional Parmesan for topping
- Chopped fresh parsley for garnish
Instructions
- Prepare the marinade by whisking olive oil, lemon juice, and honey (if using) in a bowl. Add garlic, Italian seasoning, smoked paprika, salt, black pepper, and Parmesan cheese. Mix well.
- Marinate the chicken by tossing it in the marinade until well-coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).
- Preheat the grill to medium-high heat (375°F to 450°F) and oil the grates.
- Grill the chicken for 5 to 7 minutes per side, until the internal temperature reaches 165°F (75°C).
- In the last 1 to 2 minutes, sprinkle additional Parmesan cheese on top and close the grill lid to melt it slightly.
- After cooking, let the chicken rest for 5 minutes before garnishing with parsley and serving.
Notes
For a spicier version, consider adding red pepper flakes to the marinade. For a tangier taste, replace lemon juice with balsamic vinegar.
