Ingredients
- Swordfish steaks: 2 fillets (about 6-8 oz each)
- Olive oil: 2 tablespoons
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Garlic powder: 1/2 teaspoon
- Lime juice: 2 tablespoons (freshly squeezed)
- Fresh cilantro: 1/4 cup, chopped (for garnish)
For the Mango Salsa:
- Ripe mango: 1 large, diced
- Red bell pepper: 1/2, diced
- Red onion: 1/4, finely chopped
- Jalapeño: 1 small, seeded and minced (optional)
- Lime juice: 1 tablespoon (freshly squeezed)
- Salt: 1/4 teaspoon
- Fresh cilantro: 2 tablespoons, chopped
Instructions
- Prepare the swordfish by rinsing and patting dry. Marinate with olive oil, salt, black pepper, garlic powder, and lime juice for 15-30 minutes.
- Make the mango salsa by combining diced mango, red bell pepper, red onion, jalapeño, lime juice, and salt in a bowl. Mix well and let sit.
- Preheat the grill to medium-high heat. Grill the marinated swordfish for 4-5 minutes on each side until opaque and flaky.
- Let the swordfish rest for a couple of minutes, then serve topped with mango salsa and garnished with cilantro.
