Description

  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt plus additional to taste
  • 1⁄4 teaspoon ground black pepper
  • 1 to 2 teaspoons hot sauce plus additional for serving
  • 2 green onions, sliced
  • Non-fat plain Greek yogurt or sour cream (for serving)
  • Shredded cheddar cheese (for serving)
  • Cooked brown rice or cauliflower rice (for serving)

Instructions

  1. Heat canola oil in a large skillet over high heat until hot.
  2. Reduce heat to medium, add diced potatoes, and stir frequently for about 6 minutes until golden and tender.
  3. Add ground beef, diced onion, and red bell pepper. Break the beef apart and cook for 6–8 minutes until the meat is browned and vegetables are soft.
  4. Add Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce. Stir to combine and cook for a few more minutes.
  5. Stir in green onions, adjust seasoning to taste.
  6. Remove from heat and serve with optional toppings like Greek yogurt, cheddar cheese, or over rice.
