- 1 teaspoon Dijon mustard
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt plus additional to taste
- 1⁄4 teaspoon ground black pepper
- 1 to 2 teaspoons hot sauce plus additional for serving
- 2 green onions, sliced
- Non-fat plain Greek yogurt or sour cream (for serving)
- Shredded cheddar cheese (for serving)
- Cooked brown rice or cauliflower rice (for serving)
Instructions
- Heat canola oil in a large skillet over high heat until hot.
- Reduce heat to medium, add diced potatoes, and stir frequently for about 6 minutes until golden and tender.
- Add ground beef, diced onion, and red bell pepper. Break the beef apart and cook for 6–8 minutes until the meat is browned and vegetables are soft.
- Add Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, oregano, salt, pepper, and hot sauce. Stir to combine and cook for a few more minutes.
- Stir in green onions, adjust seasoning to taste.
- Remove from heat and serve with optional toppings like Greek yogurt, cheddar cheese, or over rice.
