Description

Ground Beef Zucchini Sweet Potato Skillet is a hearty, one-pan meal made with wholesome ingredients like ground beef, sweet potato, and zucchini. Perfect for busy weeknights, it’s flavorful, nutritious, and easy to customize.

Ingredients

Scale
  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 large sweet potato, peeled and cubed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté for 2–3 minutes until fragrant.
  2. Add ground beef to the skillet. Cook for 5–7 minutes, breaking it up with a spoon until browned and no longer pink. Drain excess fat if needed.
  3. Add cubed sweet potatoes, smoked paprika, oregano, salt, and pepper. Stir to combine, cover, and cook for about 10 minutes, stirring occasionally.
  4. Uncover the skillet, add diced zucchinis, and cook for another 5 minutes until zucchini is tender but not mushy.
  5. Remove from heat, garnish with chopped fresh parsley, and serve hot.

Notes

  • Substitute ground beef with turkey, chicken, or lentils for dietary preferences.
  • Use butternut squash instead of sweet potatoes if preferred.
  • Add extra veggies like spinach or bell peppers for more nutrition.
  • To store, refrigerate in an airtight container for up to 4 days or freeze for 2–3 months.
  • Reheat in microwave or skillet until warmed through.
