- 2 tablespoons olive oil
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté for 2–3 minutes until fragrant.
- Add ground beef to the skillet. Cook for 5–7 minutes, breaking it up with a spoon until browned and no longer pink. Drain excess fat if needed.
- Add cubed sweet potatoes, smoked paprika, oregano, salt, and pepper. Stir to combine, cover, and cook for about 10 minutes, stirring occasionally.
- Uncover the skillet, add diced zucchinis, and cook for another 5 minutes until zucchini is tender but not mushy.
- Remove from heat, garnish with chopped fresh parsley, and serve hot.
