- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 tablespoon chopped parsley (optional)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic; sauté until soft.
- Add ground turkey; cook until browned.
- Stir in diced potatoes, paprika, salt, and pepper.
- Add chicken broth; bring to a boil.
- Reduce heat; cover and simmer for 15-20 minutes until potatoes are tender.
- Garnish with chopped parsley if desired.
Notes
- Use any type of potatoes you have on hand.
- Feel free to add other vegetables like bell peppers or carrots.
