Description

A tasty macaroni salad inspired by Guy Fieri.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup diced celery
  • 1 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sweet pickle relish
  • Salt and pepper to taste
  • 2 hard-boiled eggs, chopped

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and cool.
  2. In a large bowl, mix mayonnaise, Dijon mustard, and apple cider vinegar.
  3. Add celery, red bell pepper, red onion, and pickle relish to the bowl.
  4. Stir in the cooled macaroni and mix well.
  5. Add chopped hard-boiled eggs.
  6. Season with salt and pepper to taste.
  7. Chill for at least 1 hour before serving.

Notes

  • Try adding cooked bacon for extra flavor.
