Description
A tasty macaroni salad inspired by Guy Fieri.
Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 cup diced celery
- 1 cup diced red bell pepper
- 1/2 cup diced red onion
- 1/2 cup sweet pickle relish
- Salt and pepper to taste
- 2 hard-boiled eggs, chopped
Instructions
- Cook the elbow macaroni according to package instructions. Drain and cool.
- In a large bowl, mix mayonnaise, Dijon mustard, and apple cider vinegar.
- Add celery, red bell pepper, red onion, and pickle relish to the bowl.
- Stir in the cooled macaroni and mix well.
- Add chopped hard-boiled eggs.
- Season with salt and pepper to taste.
- Chill for at least 1 hour before serving.
Notes
- Try adding cooked bacon for extra flavor.
- Use Greek yogurt instead of mayonnaise for a healthier option.
- This salad can be made a day ahead.
