- 4–5 small boneless skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh minced garlic
- 1 small yellow onion, finely diced
- 24 ounces grape tomatoes, halved
- 1 cup chicken broth
- 2 tablespoons chopped fresh basil
- 1 teaspoon white sugar
- Parmesan cheese (for serving)
Instructions
- Combine Italian seasoning, garlic powder, salt, and black pepper in a bowl, then coat the chicken breasts with the spice mix.
- Heat olive oil in a skillet and sear the chicken on both sides until golden brown, about 2 minutes per side.
- Remove chicken from skillet, lower heat, and sauté minced garlic and diced onion until fragrant, about 1-2 minutes.
- Add grape tomatoes and chicken broth, bring to a simmer for about 5 minutes to soften tomatoes.
- Mix in fresh basil and sugar, return chicken to skillet, and simmer for an additional 5-8 minutes until cooked through.
- Top with fresh basil and Parmesan cheese before serving.
