Ingredients
Scale
- 1 bunch kale, chopped
- 1 cup Brussels sprouts, shredded
- 1 cup carrots, grated
- 1/2 cup dried cranberries
- 1/2 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Wash and chop the kale.
- Shred the Brussels sprouts and grate the carrots.
- In a large bowl, combine kale, Brussels sprouts, carrots, cranberries, walnuts, and feta cheese.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate for 30 minutes to let flavors meld.
Notes
- Feel free to add grilled chicken for extra protein.
- Adjust the sweetness by adding more or less honey.
- This salad can be made a few hours ahead of time.
