- 1 cup honey BBQ sauce
- 2 cups jasmine or basmati rice
- 4 cups water or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish (optional)
Instructions
- In a large bowl, season chicken breasts with garlic powder, onion powder, salt, and pepper. Pour honey BBQ sauce over chicken and coat evenly. Cover and marinate at least 30 minutes.
- Rinse rice under cold water until clear. In a pot, combine rice and water or broth. Bring to boil, reduce heat, cover, and simmer 15-20 minutes until tender. Fluff rice and set aside.
- Heat olive oil in skillet over medium heat. Cook marinated chicken 6-7 minutes per side until internal temperature reaches 165°F (75°C) and chicken is glazed. Remove and rest before slicing.
- Serve rice on plates, top with sliced chicken and drizzle with extra sauce. Garnish with green onions if desired.
