Description

Honey BBQ Chicken Rice is a comforting dish featuring juicy marinated chicken cooked in sweet and savory honey BBQ sauce, served over fluffy rice for a versatile, flavorful meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup honey BBQ sauce
  • 2 cups jasmine or basmati rice
  • 4 cups water or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. In a large bowl, season chicken breasts with garlic powder, onion powder, salt, and pepper. Pour honey BBQ sauce over chicken and coat evenly. Cover and marinate at least 30 minutes.
  2. Rinse rice under cold water until clear. In a pot, combine rice and water or broth. Bring to boil, reduce heat, cover, and simmer 15-20 minutes until tender. Fluff rice and set aside.
  3. Heat olive oil in skillet over medium heat. Cook marinated chicken 6-7 minutes per side until internal temperature reaches 165°F (75°C) and chicken is glazed. Remove and rest before slicing.
  4. Serve rice on plates, top with sliced chicken and drizzle with extra sauce. Garnish with green onions if desired.
