Description

Ingredients

  • Brussels sprouts – 1 lb
  • Olive oil – 2 tbsp
  • Honey – 3 tbsp
  • Dijon mustard – 2 tbsp
  • Apple cider vinegar – 1 tbsp
  • Salt – to taste
  • Pepper – to taste
  • Almonds – 1/2 cup, sliced
  • Dried cranberries – 1/2 cup
  • Feta cheese – 1/2 cup, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts.
  3. Toss the Brussels sprouts with olive oil, salt, and pepper.
  4. Spread them on a baking sheet and roast for 20-25 minutes.
  5. In a bowl, mix honey, Dijon mustard, and apple cider vinegar.
  6. In a large serving bowl, combine roasted Brussels sprouts, sliced almonds, dried cranberries, and feta cheese.
  7. Drizzle the honey mustard dressing over the salad and toss to combine.
  8. Serve warm or at room temperature.
