Description
A refreshing salad featuring honey mustard dressing and roasted Brussels sprouts.
Ingredients
- Brussels sprouts – 1 lb
- Olive oil – 2 tbsp
- Honey – 3 tbsp
- Dijon mustard – 2 tbsp
- Apple cider vinegar – 1 tbsp
- Salt – to taste
- Pepper – to taste
- Almonds – 1/2 cup, sliced
- Dried cranberries – 1/2 cup
- Feta cheese – 1/2 cup, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Trim and halve the Brussels sprouts.
- Toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread them on a baking sheet and roast for 20-25 minutes.
- In a bowl, mix honey, Dijon mustard, and apple cider vinegar.
- In a large serving bowl, combine roasted Brussels sprouts, sliced almonds, dried cranberries, and feta cheese.
- Drizzle the honey mustard dressing over the salad and toss to combine.
- Serve warm or at room temperature.
Notes
- Adjust sweetness by adding more or less honey.
- Can use other nuts instead of almonds.
- Substitute feta with goat cheese for a different flavor.
