Ingredients

- 4 medium sweet potatoes
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- In a large bowl, mix honey, olive oil, cinnamon, salt, and pepper.
- Add the sweet potatoes to the bowl and toss until well coated.
- Spread the sweet potatoes on a baking sheet.
- Bake for 25-30 minutes, stirring halfway through.
- Remove from the oven and let cool slightly before serving.
Notes
- Adjust honey to taste for sweetness.
- Can add nuts for crunch.
- Store leftovers in an airtight container.
