- 150 grams unsalted butter
- 150 grams granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 100 grams all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon sea salt (for garnish)
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 180°C (350°F).
- In a medium bowl, combine 100 grams of all-purpose flour with a pinch of salt for the crust.
- In a heatproof bowl, combine 200 grams of chopped dark chocolate and 150 grams of unsalted butter over a double boiler until melted and smooth.
- In a large mixing bowl, whisk together 150 grams of granulated sugar and 3 large eggs until fluffy.
- Add 1 teaspoon of vanilla extract and the cooled chocolate mixture to the egg mixture, stirring until smooth.
- Gradually fold in the flour and 1/4 teaspoon of salt until just combined.
- Pour the chocolate filling into a greased tart pan and smooth the top.
- Bake for 25-30 minutes until the edges are set and the center is slightly soft.
- Let the tart cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- If desired, prepare a ganache with 100 grams of dark chocolate and 50 grams of heavy cream, pour over the cooled tart, and garnish with sea salt and chocolate shavings before serving.
