Description
A traditional Irish boiled dinner featuring corned beef, potatoes, cabbage, and carrots.
Ingredients

- 3 lbs corned beef brisket
- 1 head of cabbage, cut into wedges
- 4 large carrots, peeled and cut into chunks
- 4 large potatoes, peeled and quartered
- 1 onion, quartered
- 2 cloves garlic, minced
- 10 cups water
- 2 bay leaves
- 1 teaspoon black peppercorns
Instructions
- Place corned beef in a large pot.
- Add water, bay leaves, peppercorns, onion, and garlic.
- Bring to a boil, then reduce heat to simmer.
- Cover and cook for 2.5 to 3 hours until tender.
- Add potatoes and carrots and cook for 20 minutes.
- Add cabbage and cook for an additional 15 minutes.
- Remove meat and vegetables; slice the beef and serve with vegetables.
Notes
- Let the meat rest before slicing.
- Save the broth for soup or cooking grains.
