Description

A traditional Irish boiled dinner featuring corned beef, potatoes, cabbage, and carrots.


Ingredients

Scale
  • 3 lbs corned beef brisket
  • 1 head of cabbage, cut into wedges
  • 4 large carrots, peeled and cut into chunks
  • 4 large potatoes, peeled and quartered
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 10 cups water
  • 2 bay leaves
  • 1 teaspoon black peppercorns

Instructions

  1. Place corned beef in a large pot.
  2. Add water, bay leaves, peppercorns, onion, and garlic.
  3. Bring to a boil, then reduce heat to simmer.
  4. Cover and cook for 2.5 to 3 hours until tender.
  5. Add potatoes and carrots and cook for 20 minutes.
  6. Add cabbage and cook for an additional 15 minutes.
  7. Remove meat and vegetables; slice the beef and serve with vegetables.

Notes

  • Let the meat rest before slicing.
  • Save the broth for soup or cooking grains.
