Description
A delicious Italian chicken panini with grilled chicken, fresh vegetables, and melted cheese.
Ingredients

- 2 slices of ciabatta bread
- 1 grilled chicken breast
- 1 slice of mozzarella cheese
- 1 slice of provolone cheese
- 1/4 cup of roasted red peppers
- 1/4 cup of fresh basil leaves
- 2 tablespoons of pesto
- Olive oil for brushing
Instructions
- Preheat your panini press or grill.
- Spread pesto on one side of each slice of bread.
- Layer grilled chicken, mozzarella, provolone, roasted red peppers, and basil on one slice.
- Top with the second slice of bread, pesto side down.
- Brush the outside of the bread with olive oil.
- Place the sandwich in the panini press or grill and cook until golden brown and cheese is melted.
- Remove from heat and slice in half before serving.
Notes
- Use leftover grilled chicken for quicker preparation.
- Customize vegetables according to your taste.
- Serve with a side salad for a complete meal.
