Description

A delicious Italian chicken panini with grilled chicken, fresh vegetables, and melted cheese.


Ingredients

Scale
  • 2 slices of ciabatta bread
  • 1 grilled chicken breast
  • 1 slice of mozzarella cheese
  • 1 slice of provolone cheese
  • 1/4 cup of roasted red peppers
  • 1/4 cup of fresh basil leaves
  • 2 tablespoons of pesto
  • Olive oil for brushing

Instructions

  1. Preheat your panini press or grill.
  2. Spread pesto on one side of each slice of bread.
  3. Layer grilled chicken, mozzarella, provolone, roasted red peppers, and basil on one slice.
  4. Top with the second slice of bread, pesto side down.
  5. Brush the outside of the bread with olive oil.
  6. Place the sandwich in the panini press or grill and cook until golden brown and cheese is melted.
  7. Remove from heat and slice in half before serving.
