A creamy and spicy potato salad with jalapenos and cheese.
Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced jalapenos
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
Instructions
- Boil the diced potatoes until tender, about 15 minutes.
- Drain and let cool.
- In a large bowl, mix mayonnaise, sour cream, garlic powder, salt, and pepper.
- Add cooled potatoes, jalapenos, cheese, and green onions to the bowl.
- Toss gently to combine.
- Refrigerate for at least 1 hour before serving.
Notes
- Adjust jalapeno quantity for desired spiciness.
- Can be made a day ahead.
- Garnish with extra green onions before serving.
