- 1 lb ground beef
- 2 tbsp jerk seasoning
- 1/4 cup breadcrumbs
- 1 egg
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 bell pepper, sliced
- 2 cups vegetable broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix ground beef, jerk seasoning, breadcrumbs, and egg.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20 minutes or until cooked through.
- In a large pot, sauté onion, garlic, and ginger until fragrant.
- Add bell pepper and cook for 5 minutes.
- Pour in coconut milk and vegetable broth, then stir.
- Add baked meatballs to the pot and simmer for 10 minutes.
- Season with salt and pepper to taste.
- Serve hot over rice or with bread.
