- 1 pound lean ground beef
- 3 tablespoons low sodium soy sauce
- 1 1/4 cups minced scallions, divided
- 1 tablespoon minced garlic
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 2 tablespoons minced ginger
- 1/4 teaspoon red pepper flakes
- 1 tablespoon sesame oil
- Cooked brown rice, quinoa, or cauliflower rice
- 1 1/2 cups shredded carrots
- Thinly sliced seedless cucumbers
- Toasted sesame seeds, for garnish
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, for about 5 minutes until browned and no longer pink.
- When the beef is halfway cooked, add 1 tablespoon of soy sauce and 2/3 of the minced scallions. Stir and continue cooking until fully browned.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- In a small bowl, mix the remaining soy sauce, rice vinegar, honey, ginger, and red pepper flakes. Pour the sauce over the beef and stir to combine. Cook for an additional 2 minutes.
- Remove from heat and stir in the sesame oil. Sprinkle the remaining scallions over the beef and adjust seasoning if needed.
- To serve, spoon cooked rice or grain into bowls, top with the beef mixture, shredded carrots, sliced cucumbers, and toasted sesame seeds.

- Use low sodium soy sauce to control the salt level.
- Ground turkey or chicken can be substituted for beef.
