Description

Korean Beef Bowl is a flavorful and quick meal featuring tender ground beef in a sweet and savory sauce, served over rice and topped with fresh vegetables like shredded carrots and cucumbers. This comforting dish is perfect for busy weeknights and showcases classic Korean-inspired flavors.


Ingredients

  • 1 pound lean ground beef
  • 3 tablespoons low sodium soy sauce
  • 1 1/4 cups minced scallions, divided
  • 1 tablespoon minced garlic
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons minced ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon sesame oil
  • Cooked brown rice, quinoa, or cauliflower rice
  • 1 1/2 cups shredded carrots
  • Thinly sliced seedless cucumbers
  • Toasted sesame seeds, for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, for about 5 minutes until browned and no longer pink.
  2. When the beef is halfway cooked, add 1 tablespoon of soy sauce and 2/3 of the minced scallions. Stir and continue cooking until fully browned.
  3. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. In a small bowl, mix the remaining soy sauce, rice vinegar, honey, ginger, and red pepper flakes. Pour the sauce over the beef and stir to combine. Cook for an additional 2 minutes.
  5. Remove from heat and stir in the sesame oil. Sprinkle the remaining scallions over the beef and adjust seasoning if needed.
  6. To serve, spoon cooked rice or grain into bowls, top with the beef mixture, shredded carrots, sliced cucumbers, and toasted sesame seeds.

Notes

  • Use low sodium soy sauce to control the salt level.
  • Ground turkey or chicken can be substituted for beef.
  • Pickled vegetables add extra flavor and contrast.
  • Do not overcook the beef to prevent dryness.
