- 2 lemons (1 for slices, 1 for juice)
- 4–5 sprigs of fresh thyme
- 3 tablespoons olive oil
- 3 cloves garlic, minced

- Black pepper, to taste
Instructions
- Rinse the whole sea bass under cold water and pat dry with paper towels.
- Make three diagonal slashes on each side of the fish for even cooking and flavor infusion.
- In a small bowl, combine olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the fish.
- Squeeze the juice of one lemon over the fish and place lemon slices and thyme inside the cavity and slashes.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the seasoned sea bass on the baking sheet and roast for 25-30 minutes until the flesh is opaque and flakes easily with a fork.
- Let the fish rest for a few minutes before transferring it to a serving platter. Garnish with fresh thyme and lemon slices.
