Ingredients

  • 1 whole sea bass (about 1.5 to 2 lbs), cleaned and scaled
  • 2 lemons (1 for slices, 1 for juice)
  • 45 sprigs of fresh thyme
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse the whole sea bass under cold water and pat dry with paper towels.
  2. Make three diagonal slashes on each side of the fish for even cooking and flavor infusion.
  3. In a small bowl, combine olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the fish.
  4. Squeeze the juice of one lemon over the fish and place lemon slices and thyme inside the cavity and slashes.
  5. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Place the seasoned sea bass on the baking sheet and roast for 25-30 minutes until the flesh is opaque and flakes easily with a fork.
  7. Let the fish rest for a few minutes before transferring it to a serving platter. Garnish with fresh thyme and lemon slices.
