Description

A simple and fresh lemon asparagus pasta dish.


Ingredients

  • 200g spaghetti
  • 150g asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese, grated (optional)

Instructions

  1. Cook spaghetti according to package instructions.
  2. In the last 2 minutes of cooking, add asparagus to the pasta.
  3. Drain pasta and asparagus, reserving a bit of pasta water.
  4. In a large pan, heat olive oil over medium heat.
  5. Add garlic and sauté until fragrant.
  6. Add cooked pasta and asparagus to the pan.
  7. Stir in lemon juice, lemon zest, salt, and pepper.
  8. If needed, add reserved pasta water to loosen the sauce.
  9. Serve with grated Parmesan cheese if desired.
