Description
A refreshing and nutritious lemon herb quinoa and chickpeas dish.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can chickpeas, rinsed and drained
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
- In a bowl, mix chickpeas, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
- Add cooked quinoa to the chickpea mixture and stir well.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning as needed.
- Can be served warm or cold.
- This dish pairs well with grilled vegetables.
