Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas, rinsed and drained
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. In a bowl, mix chickpeas, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  5. Add cooked quinoa to the chickpea mixture and stir well.
  6. Garnish with fresh parsley before serving.
