Description

Linzer cookies are a traditional Austrian treat made with almond flour and filled with fruit jam.


Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, all-purpose flour, cinnamon, and salt.
  3. In another bowl, cream together the butter and powdered sugar.
  4. Add the egg and vanilla extract to the butter mixture.
  5. Gradually combine the dry ingredients into the wet mixture.
  6. Chill the dough for 30 minutes.
  7. Roll out the dough and cut into shapes.
  8. Cut out the center of half of the cookies.
  9. Bake for 12-15 minutes until lightly golden.
  10. Let cool and spread jam on the solid cookies, then top with the cut-out cookies.

Notes

  • Use any fruit jam you prefer.
  • Store in an airtight container for up to one week.
