Ingredients

- 2 pounds of potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup green onions, chopped
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, milk, salt, and pepper to the potatoes and mash until smooth.
- Stir in half of the cheddar cheese, green onions, and bacon.
- Transfer the mixture to a baking dish and top with the remaining cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- You can add more toppings like extra bacon or chives.
- Store leftovers in an airtight container in the fridge.
