Description

Crispy potato skins topped with cheese, bacon, and green onions.


Ingredients

Scale
  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Rub olive oil, salt, and pepper on the potatoes.
  4. Bake the potatoes for 45 minutes or until tender.
  5. Remove the potatoes and let them cool slightly.
  6. Cut the potatoes in half and scoop out some flesh, leaving a thin layer.
  7. Place the skins on a baking sheet.
  8. Fill each skin with cheese and bacon.
  9. Bake for an additional 10-15 minutes until cheese melts.
  10. Top with green onions and serve with sour cream.
