Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/4 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Rub olive oil, salt, and pepper on the potatoes.
- Bake the potatoes for 45 minutes or until tender.
- Remove the potatoes and let them cool slightly.
- Cut the potatoes in half and scoop out some flesh, leaving a thin layer.
- Place the skins on a baking sheet.
- Fill each skin with cheese and bacon.
- Bake for an additional 10-15 minutes until cheese melts.
- Top with green onions and serve with sour cream.
Notes
- Use leftover potatoes for a quicker prep.
- Add jalapeños for a spicy kick.
