Description

Mamaw’s Chicken and Rice Casserole is a creamy, comforting, and easy-to-make dish combining tender chicken, rice, and savory soups for a satisfying family meal.


Ingredients

  • 500g chicken breast or thighs, cooked and shredded
  • 2 cups cooked rice (white or brown)
  • 1 can (300ml) cream of chicken soup
  • 1 can (300ml) cream of mushroom soup
  • 250ml chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 150g shredded cheddar cheese
  • 100g crushed Ritz crackers or buttered breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 180°C (350°F) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine shredded chicken, cooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  3. Spread the mixture evenly into the greased baking dish.
  4. Top with shredded cheddar cheese.
  5. In a small bowl, mix crushed Ritz crackers with melted butter and sprinkle over the cheese layer.
  6. Bake uncovered for 30-35 minutes until hot, bubbly, and golden brown on top.
  7. Let cool for 5 minutes before serving.
