Description

Marinated chicken quarters are tender and juicy pieces of chicken marinated in yogurt, garlic, ginger, and a blend of spices, perfect for baking, grilling, or air frying.


Ingredients

  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 cup plain yogurt
  • 2 pounds chicken quarters (or a mix of thighs and drumsticks)

Instructions

  1. Preheat the oven to 200°C/400°F.
  2. In a mixing bowl, combine minced ginger, minced garlic, cumin, cinnamon, garam masala, ground coriander, smoked paprika, salt, olive oil, and yogurt. Stir until smooth.
  3. Pat dry the chicken quarters with paper towels. Coat each piece with the marinade, ensuring it’s fully covered.
  4. Let the chicken marinate for at least 10 minutes or up to 24 hours in the fridge.
  5. Prepare two wire racks lined with tin foil to catch drippings. Place the marinated chicken on the racks, skin-side up.
  6. Bake the chicken for 20-25 minutes, checking for an internal temperature of 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.
  8. For grilling, cook the chicken for about 8 minutes per side on a preheated grill.
  9. For air frying, cook the chicken at 200°C/400°F for 20 minutes, flipping halfway through.
  10. For Instant Pot, sear the chicken, then pressure cook for 8-10 minutes.

  • Marinate the chicken for longer to enhance the flavor.
  • Ensure there’s enough space between the chicken pieces to cook evenly.
