Marinated chicken quarters are tender and juicy pieces of chicken marinated in yogurt, garlic, ginger, and a blend of spices, perfect for baking, grilling, or air frying.

- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 cup plain yogurt
- 2 pounds chicken quarters (or a mix of thighs and drumsticks)
Instructions
- Preheat the oven to 200°C/400°F.
- In a mixing bowl, combine minced ginger, minced garlic, cumin, cinnamon, garam masala, ground coriander, smoked paprika, salt, olive oil, and yogurt. Stir until smooth.
- Pat dry the chicken quarters with paper towels. Coat each piece with the marinade, ensuring it’s fully covered.
- Let the chicken marinate for at least 10 minutes or up to 24 hours in the fridge.
- Prepare two wire racks lined with tin foil to catch drippings. Place the marinated chicken on the racks, skin-side up.
- Bake the chicken for 20-25 minutes, checking for an internal temperature of 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.
- For grilling, cook the chicken for about 8 minutes per side on a preheated grill.
- For air frying, cook the chicken at 200°C/400°F for 20 minutes, flipping halfway through.
- For Instant Pot, sear the chicken, then pressure cook for 8-10 minutes.

- Marinate the chicken for longer to enhance the flavor.
- Ensure there’s enough space between the chicken pieces to cook evenly.

- If you want to add heat, consider adding chili peppers or cayenne pepper to the marinade.
