Marry Me Chicken Pasta is a romantic and delicious dish featuring juicy chicken, creamy sauce, and sun-dried tomatoes served over tender pasta.

- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 8 ounces pasta (penne or fettuccine)
- Fresh basil or parsley, for garnish
Instructions
- Cook the pasta according to the package directions. Reserve 1 cup of pasta water and set the pasta aside.
- Heat olive oil in a skillet, season chicken with salt and pepper, sear for 6-7 minutes on each side until golden brown. Let the chicken rest before slicing it.
- In the same skillet, sauté garlic, add sun-dried tomatoes, then pour in heavy cream and chicken broth. Simmer and add Parmesan cheese and Italian seasoning. Adjust seasoning with salt and pepper.
- Add sliced chicken to the skillet and toss with cooked pasta. If the sauce is too thick, add reserved pasta water to adjust consistency. Garnish with fresh herbs.
Notes
- For a lighter dish, use half-and-half instead of heavy cream.
- If you don’t have sun-dried tomatoes, fresh cherry tomatoes work as a substitute.
- For a vegetarian option, replace chicken with chickpeas or tofu.
