Description

Marry Me Chickpeas is a hearty, comforting vegan dish featuring chickpeas simmered in a creamy coconut milk and sun-dried tomato sauce, infused with herbs and spices. It’s quick, flavorful, and ideal for weeknight dinners or impressing loved ones.


Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, crushed
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon red chili flakes
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 teaspoon fresh thyme
  • 2 cans chickpeas, drained and rinsed
  • 1 cup vegetable stock
  • 1 cup coconut milk
  • 68 fresh basil leaves, roughly shredded
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add crushed garlic and sauté until fragrant, about 1–2 minutes.
  2. Stir in Italian seasoning, red chili flakes, and ground black pepper. Cook for another minute to release the flavors.
  3. Add tomato paste and stir until combined with the spices and garlic.
  4. Add the sun-dried tomatoes, thyme, and chickpeas. Stir well to coat the chickpeas.
  5. Pour in the vegetable stock and bring to a gentle simmer. Cover and cook for 5 minutes.
  6. Remove the lid and stir in coconut milk. Simmer for 1–2 more minutes to blend the flavors.
  7. Add shredded basil and season with salt and additional black pepper to taste.
  8. Serve hot as is, with rice, bread, or your favorite grain.
