- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- 1/2 tablespoon Italian seasoning
- 1/2 teaspoon red chili flakes
- 1/4 teaspoon ground black pepper
- 2 tablespoons tomato paste
- 1/2 cup sun-dried tomatoes, sliced
- 1 teaspoon fresh thyme
- 2 cans chickpeas, drained and rinsed
- 1 cup vegetable stock
- 1 cup coconut milk
- 6–8 fresh basil leaves, roughly shredded
- Salt and freshly ground black pepper, to taste
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add crushed garlic and sauté until fragrant, about 1–2 minutes.
- Stir in Italian seasoning, red chili flakes, and ground black pepper. Cook for another minute to release the flavors.
- Add tomato paste and stir until combined with the spices and garlic.
- Add the sun-dried tomatoes, thyme, and chickpeas. Stir well to coat the chickpeas.
- Pour in the vegetable stock and bring to a gentle simmer. Cover and cook for 5 minutes.
- Remove the lid and stir in coconut milk. Simmer for 1–2 more minutes to blend the flavors.
- Add shredded basil and season with salt and additional black pepper to taste.
- Serve hot as is, with rice, bread, or your favorite grain.
