Description

Marry Me Pasta is a rich, creamy dish with sun-dried tomatoes, garlic, and Parmesan, perfect for romantic dinners and special occasions.

Ingredients

Scale
  • 8 ounces of pasta (fettuccine, penne, or spaghetti)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes (packed in oil), drained and chopped
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • Red pepper flakes to taste (optional)

Instructions

  1. Cook the pasta in salted water according to package instructions until al dente. Reserve about half a cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Lower heat and add heavy cream, letting it simmer for 3-5 minutes. Stir in sun-dried tomatoes and Parmesan cheese. Cook for another 2-3 minutes until the cheese melts and the sauce is creamy. Add reserved pasta water if the sauce is too thick.
  4. Add cooked pasta to the skillet and toss to coat in the sauce. Season with salt, pepper, and red pepper flakes as desired. Cook for an additional minute to heat through.
  5. Serve immediately, garnished with fresh basil and extra Parmesan cheese.

Notes

  • For a lighter option, use half-and-half or coconut cream instead of heavy cream.
  • Substitute sun-dried tomatoes with roasted red peppers or fresh cherry tomatoes for a different twist.
  • For a vegan version, use plant-based cream and nutritional yeast instead of Parmesan.
  • Gluten-free pasta can be used for dietary preferences.
