Mediterranean quesadillas are a delicious blend of flavors, combining fresh vegetables and cheese.
Ingredients

- 4 whole wheat tortillas
- 1 cup feta cheese, crumbled
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup black olives, sliced
- 1 red bell pepper, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Place one tortilla in the pan.
- Layer half of the feta, spinach, sun-dried tomatoes, black olives, and red bell pepper on the tortilla.
- Top with another tortilla.
- Cook for 3-4 minutes until golden brown, then flip and cook the other side.
- Remove from pan and cut into wedges.
- Repeat with remaining ingredients.
Notes
- Serve with tzatziki sauce.
- Customize with your favorite vegetables.
- Can be made vegan by omitting feta.
