Description

Mediterranean quesadillas are a delicious blend of flavors, combining fresh vegetables and cheese.


Ingredients

  • 4 whole wheat tortillas
  • 1 cup feta cheese, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup black olives, sliced
  • 1 red bell pepper, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Place one tortilla in the pan.
  3. Layer half of the feta, spinach, sun-dried tomatoes, black olives, and red bell pepper on the tortilla.
  4. Top with another tortilla.
  5. Cook for 3-4 minutes until golden brown, then flip and cook the other side.
  6. Remove from pan and cut into wedges.
  7. Repeat with remaining ingredients.

Notes

  • Serve with tzatziki sauce.
  • Customize with your favorite vegetables.
  • Can be made vegan by omitting feta.
