Ingredients

  • 1 cup sushi rice
  • 2 cups water
  • 1 cup diced raw tuna
  • 1 avocado, sliced
  • 1 cup black beans, rinsed
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 jalapeño, sliced (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water. Bring to a boil, then reduce to low heat and cover. Cook for 20 minutes.
  3. Fluff the rice with a fork and let it cool.
  4. In a bowl, mix the diced tuna with lime juice, chili powder, and salt.
  5. In serving bowls, layer the rice, black beans, corn, tomatoes, avocado, and tuna.
  6. Garnish with cilantro and jalapeño slices if desired.
