Ingredients

- 1 cup sushi rice
- 2 cups water
- 1 cup diced raw tuna
- 1 avocado, sliced
- 1 cup black beans, rinsed
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt to taste
- 1 jalapeño, sliced (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rice and water. Bring to a boil, then reduce to low heat and cover. Cook for 20 minutes.
- Fluff the rice with a fork and let it cool.
- In a bowl, mix the diced tuna with lime juice, chili powder, and salt.
- In serving bowls, layer the rice, black beans, corn, tomatoes, avocado, and tuna.
- Garnish with cilantro and jalapeño slices if desired.
