Description

A unique twist on classic deviled eggs with a Mexican street corn flavor.


Ingredients

  • 6 hard-boiled eggs
  • 1/2 cup corn (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 cup cotija cheese, crumbled
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Peel the hard-boiled eggs and slice them in half lengthwise.
  2. Remove the yolks and place them in a mixing bowl.
  3. Add corn, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper to the yolks.
  4. Mash the mixture until smooth and well combined.
  5. Stir in cotija cheese and cilantro.
  6. Fill the egg whites with the yolk mixture.
  7. Sprinkle additional chili powder and cilantro on top for garnish.

Notes

  • Use fresh corn for better flavor.
  • Adjust the spice level by adding more chili powder if desired.
