A unique twist on classic deviled eggs with a Mexican street corn flavor.
Ingredients

- 6 hard-boiled eggs
- 1/2 cup corn (fresh or frozen)
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 cup cotija cheese, crumbled
- 2 tablespoons cilantro, chopped
- Salt and pepper to taste
Instructions
- Peel the hard-boiled eggs and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Add corn, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper to the yolks.
- Mash the mixture until smooth and well combined.
- Stir in cotija cheese and cilantro.
- Fill the egg whites with the yolk mixture.
- Sprinkle additional chili powder and cilantro on top for garnish.
Notes
- Use fresh corn for better flavor.
- Adjust the spice level by adding more chili powder if desired.
- Serve chilled for best taste.
