- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 large eggs
- 12 mini graham cracker crusts
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Add in the sugar, sour cream, and vanilla extract. Mix well.
- Incorporate the eggs one at a time, mixing until just blended.
- Pour the cheesecake batter into the mini crusts.
- Bake for 20 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours before serving.
