Ingredients

  • 1 package of pre-made pie crusts
  • 4 large eggs
  • 1 cup of milk (whole or 2%)
  • 1 cup of diced bell peppers
  • 1 cup of chopped spinach
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of garlic powder (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pre-made pie crusts and cut out circles about 4 inches in diameter. Press them into a muffin tin.
  3. In a large mixing bowl, whisk together the eggs and milk until well combined.
  4. Stir in the diced bell peppers, chopped spinach, and shredded cheese. Season with salt, pepper, and garlic powder.
  5. Pour the mixture into each pie crust, filling them about 3/4 full.
  6. Bake for 20-25 minutes until puffed up and golden brown. A toothpick inserted should come out clean.
  7. Let them cool for 5 minutes in the muffin tin before serving.
