Description

A delightful mixed berry muffins recipe that is easy to make and packed with fresh flavors.

Ingredients

  • All-purpose flour: 2 cups (240 grams)
  • Granulated sugar: 3/4 cup (150 grams)
  • Baking powder: 2 teaspoons
  • Salt: 1/2 teaspoon
  • Eggs: 2 large
  • Milk: 1 cup (240 ml)
  • Unsalted butter: 1/2 cup (115 grams), melted
  • Vanilla extract: 1 teaspoon
  • Fresh blueberries: 1/2 cup (75 grams)
  • Fresh raspberries: 1/2 cup (75 grams)
  • Fresh strawberries: 1/2 cup (75 grams), hulled and chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or grease it with non-stick spray.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  4. In a separate bowl, beat the eggs, then add the milk, melted unsalted butter, and vanilla extract. Mix until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries, raspberries, and chopped strawberries.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Avoid overmixing the batter to prevent tough muffins.
  • Measure ingredients accurately for best results.
  • Use room temperature eggs and milk for a smoother batter.
  • Always preheat your oven for even baking.
  • Check for doneness with a toothpick.
