Description

Mongolian Ground Beef is a quick and flavorful one-skillet meal made with ground beef, soy sauce, brown sugar, garlic, and ginger. Perfect for busy weeknights, it offers a savory and slightly sweet sauce that pairs beautifully with rice or noodles.


Ingredients

  • 1 pound lean ground beef
  • 1 small bunch scallions (green parts only, cut into 1 inch pieces)
  • 1/3 cup packed brown sugar
  • 1/3 cup water
  • 1/3 cup low sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 3 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt & pepper, to taste
  • Rice or noodles, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook for 8–10 minutes, breaking it up as it browns. Remove excess fat if necessary.
  2. While beef cooks, whisk together brown sugar, water, soy sauce, cornstarch, ginger, garlic, and red pepper flakes (if using) in a bowl.
  3. Once beef is browned, add scallions to the skillet and stir briefly.
  4. Pour the sauce into the skillet and stir to coat the beef and scallions evenly.
  5. Let the mixture cook for 2–3 minutes, or until the sauce thickens into a glaze. Taste and adjust seasoning with salt and pepper if needed.
  6. Remove from heat and serve over rice or noodles.
