Ingredients

- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can chickpeas, drained
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a tagine or pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add potatoes and carrots, stir for 5 minutes.
- Mix in chickpeas, cumin, paprika, turmeric, salt, and pepper.
- Pour in vegetable broth, cover, and simmer for 30 minutes.
- Check for tenderness and adjust seasoning as needed.
- Garnish with fresh cilantro before serving.
