Description

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, and sauté until soft.
  3. Add mushrooms and cook until browned.
  4. Stir in orzo and cook for 1 minute.
  5. Add vegetable broth and bring to a boil.
  6. Reduce heat and simmer until orzo is tender.
  7. Stir in heavy cream and Parmesan cheese.
  8. Season with salt and pepper.
  9. Garnish with parsley and serve hot.

Notes

  • Adjust the consistency with more or less broth.
  • Use any type of mushrooms you prefer.
  • This dish can be made vegetarian by omitting cheese.
