Ingredients

- 8 oz pasta (spaghetti, penne, or fettuccine)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms (cremini or button), sliced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: ¼ tsp red pepper flakes for heat
Instructions
- Boil water in a large pot, add pasta, and cook until al dente (8-10 minutes). Reserve 1 cup pasta water, drain, and set aside.
- Heat olive oil in a skillet over medium heat. Sauté onions for 3-4 minutes, then add garlic and cook for another minute.
- Add mushrooms to the skillet and cook for 5-7 minutes, until browned. Season with salt and pepper, adding red pepper flakes for heat if desired.
- Reduce heat to low, add heavy cream, and stir. Let simmer for 2-3 minutes until the sauce thickens. Gradually add reserved pasta water if the sauce is too thick.
- Stir in Parmesan cheese until melted, then toss cooked pasta in the sauce. Adjust seasoning as needed.
- Serve hot, garnished with fresh parsley and additional Parmesan cheese if desired.
Notes
- For a vegan version, replace heavy cream with coconut cream or a nut-based alternative, and omit Parmesan cheese.
- Try shiitake or portobello mushrooms for a deeper flavor.
- Use whole grain or gluten-free pasta for a healthier alternative.
