Description

Mushroom pasta is a comforting dish with earthy mushrooms, creamy sauce, and tender pasta. A rich and savory recipe that’s easy to make.


Ingredients

  • 8 oz pasta (spaghetti, penne, or fettuccine)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms (cremini or button), sliced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: ¼ tsp red pepper flakes for heat

Instructions

  1. Boil water in a large pot, add pasta, and cook until al dente (8-10 minutes). Reserve 1 cup pasta water, drain, and set aside.
  2. Heat olive oil in a skillet over medium heat. Sauté onions for 3-4 minutes, then add garlic and cook for another minute.
  3. Add mushrooms to the skillet and cook for 5-7 minutes, until browned. Season with salt and pepper, adding red pepper flakes for heat if desired.
  4. Reduce heat to low, add heavy cream, and stir. Let simmer for 2-3 minutes until the sauce thickens. Gradually add reserved pasta water if the sauce is too thick.
  5. Stir in Parmesan cheese until melted, then toss cooked pasta in the sauce. Adjust seasoning as needed.
  6. Serve hot, garnished with fresh parsley and additional Parmesan cheese if desired.

Notes

  • For a vegan version, replace heavy cream with coconut cream or a nut-based alternative, and omit Parmesan cheese.
  • Try shiitake or portobello mushrooms for a deeper flavor.
