- 8 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, diced
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup marinara sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a pan, sauté the mushrooms until soft. Add spinach and cook until wilted.
- In a bowl, mix ricotta cheese, garlic powder, onion powder, salt, and pepper.
- Add the mushroom and spinach mixture to the ricotta and stir well.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the filling on each noodle, roll it up, and place it seam-side down in the dish.
- Top the rolls with remaining marinara sauce and sprinkle mozzarella cheese on top.
- Bake for 25-30 minutes until cheese is bubbly and golden.
Notes
- Use gluten-free lasagna noodles for a gluten-free option.
- Feel free to add other vegetables like zucchini or bell peppers.
- Let the rolls cool for a few minutes before serving.
