Description

Nachos with Taco Seasoning is a delicious dish featuring crispy tortilla chips, seasoned beef, vegetables, and melted cheese, perfect for gatherings and family dinners.

Ingredients

Scale
  • 5 teaspoons paprika
  • 1 1/4 teaspoons garlic powder
  • 1 1/4 teaspoons ground cumin
  • 1 1/4 teaspoons onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon oregano leaves
  • 1 1/2 teaspoons salt
  • 2 tablespoons vegetable oil
  • 1 pound ground beef
  • 1 cup diced onion
  • 1 cup diced green bell pepper
  • 1 (10 ounce) can diced tomatoes with green chiles
  • 1 (15 ounce) can Mexican-style corn (optional)
  • 1 (16 ounce) can refried beans
  • 1 cup shredded Cheddar cheese (or as needed)
  • 4 ounces tortilla chips (or as needed)
  • 1/2 cup sour cream (optional)
  • 1/2 cup salsa (optional)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup green onions (optional)

Instructions

  1. Make the taco seasoning by combining paprika, garlic powder, ground cumin, onion powder, chili powder, oregano, and salt in a small bowl.
  2. Cook the beef in a large skillet with vegetable oil over medium-high heat for 5-7 minutes until browned and crumbly. Add diced onion and bell pepper and cook for 2 more minutes.
  3. Add diced tomatoes, green chiles, and Mexican-style corn to the beef mixture. Stir in the taco seasoning and simmer on low heat for a few minutes.
  4. In a microwave-safe bowl, combine refried beans and the remaining half of diced tomatoes with green chiles. Microwave for 1-3 minutes until heated through.
  5. Assemble the nachos by layering tortilla chips, refried beans, beef mixture, and shredded cheese in a microwave-safe dish.
  6. Microwave the nachos on high for 2-3 minutes until the cheese is melted and bubbly.
  7. Top with optional ingredients such as sour cream, salsa, sliced black olives, jalapeños, and green onions before serving.

Notes

  • Adjust the meat based on preference, such as using ground turkey or chicken instead of beef.
  • Feel free to use mozzarella cheese for a milder flavor or any fresh vegetables for added freshness.
  • Nachos are best enjoyed fresh, as the chips can get soggy when stored for too long.
