- 1 cup shredded Cheddar cheese (or as needed)
- 4 ounces tortilla chips (or as needed)
- 1/2 cup sour cream (optional)
- 1/2 cup salsa (optional)
- 1/4 cup sliced black olives (optional)
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup green onions (optional)
Instructions
- Make the taco seasoning by combining paprika, garlic powder, ground cumin, onion powder, chili powder, oregano, and salt in a small bowl.
- Cook the beef in a large skillet with vegetable oil over medium-high heat for 5-7 minutes until browned and crumbly. Add diced onion and bell pepper and cook for 2 more minutes.
- Add diced tomatoes, green chiles, and Mexican-style corn to the beef mixture. Stir in the taco seasoning and simmer on low heat for a few minutes.
- In a microwave-safe bowl, combine refried beans and the remaining half of diced tomatoes with green chiles. Microwave for 1-3 minutes until heated through.
- Assemble the nachos by layering tortilla chips, refried beans, beef mixture, and shredded cheese in a microwave-safe dish.
- Microwave the nachos on high for 2-3 minutes until the cheese is melted and bubbly.
- Top with optional ingredients such as sour cream, salsa, sliced black olives, jalapeños, and green onions before serving.
Notes
- Adjust the meat based on preference, such as using ground turkey or chicken instead of beef.
- Feel free to use mozzarella cheese for a milder flavor or any fresh vegetables for added freshness.
- Nachos are best enjoyed fresh, as the chips can get soggy when stored for too long.
