Description

One Pan Cheesy Jalapeño Chicken is a quick and flavorful dinner made in a single skillet with tender chicken breasts, spicy jalapeños, sweet corn, melted cheese, and zesty lime. Perfect for weeknights or casual gatherings.


Ingredients

  • 1 lime, sliced
  • 3 1/2 Tbsp vegetable oil, divided
  • 3 boneless, skinless chicken breasts, cut in half and pounded to 1/2 inch thick
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 3/4 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp dried minced onion
  • 1/4 tsp ancho chile powder
  • 1/2 cup all-purpose flour
  • 1 1/2 to 2 cups frozen corn kernels, thawed
  • 2 jalapeños, seeds removed and sliced into strips
  • 2 cloves garlic, minced
  • 3 Tbsp lime juice
  • 1/2 cup water
  • 1 to 1 1/2 cups shredded Mexican blend cheese
  • Minced fresh cilantro, for garnish
  • Extra lime wedges, for garnish

Instructions

  1. Season chicken breasts with chili powder, oregano, salt, cumin, black pepper, minced onion, and ancho chile powder. Massage spices into chicken.
  2. Dredge the seasoned chicken in all-purpose flour until evenly coated. Set aside.
  3. Heat a large oven-safe skillet over medium-high heat. Char lime slices for 1–2 minutes per side, then remove and set aside.
  4. Add 2 1/2 Tbsp of oil to the skillet. Sear chicken pieces for about 3 minutes on each side until golden brown. Remove and set aside.
  5. Add the remaining 1 Tbsp oil to the pan. Sauté corn, jalapeños, and garlic for 2–3 minutes until slightly browned.
  6. Return chicken to the skillet. Pour in lime juice and water. Cook until liquid is mostly absorbed.
  7. Top with shredded cheese. Broil on high for 2–3 minutes until cheese is melted and bubbly.
  8. Garnish with fresh cilantro and charred lime slices. Serve hot with optional sides.

Notes

  • Use chicken thighs instead of breasts for a juicier option.
  • Smoked paprika can replace chili powder for a smokier flavor.
  • Adjust jalapeño quantity to control the heat level.
  • Serve with rice, tortillas, or salad for a full meal.
