Description

One Pan Chicken & Pesto Orzo is a simple and flavorful meal that combines tender chicken with creamy pesto orzo in one dish.


Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup pesto
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper.
  3. Cook the chicken for 6-7 minutes on each side until golden brown.
  4. Remove chicken and set aside.
  5. Add orzo and chicken broth to the skillet.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Stir in pesto, cherry tomatoes, and Parmesan cheese.
  8. Slice the chicken and return to the skillet.
  9. Cook for an additional 2 minutes to heat through.
