- 2 chicken breasts
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup pesto
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper.
- Cook the chicken for 6-7 minutes on each side until golden brown.
- Remove chicken and set aside.
- Add orzo and chicken broth to the skillet.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in pesto, cherry tomatoes, and Parmesan cheese.
- Slice the chicken and return to the skillet.
- Cook for an additional 2 minutes to heat through.
