- 2 cups of uncooked fettuccine or penne pasta
- 1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons of olive oil
- 3 cups of chicken broth
- 1 cup of heavy cream
- 2 cups of shredded Parmesan cheese
- 3 cloves of garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
- Red pepper flakes (optional, for a bit of heat)
Instructions
- Heat olive oil in a large pot or skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté garlic for 1 minute. Add chicken broth, bring to a boil, then reduce heat and cook pasta for 10-12 minutes, stirring occasionally.
- Add heavy cream and Parmesan cheese, stirring until cheese melts and sauce is creamy. Adjust thickness with reserved pasta water if needed.
- Return chicken to the pot, stir everything together, and heat through for 2-3 minutes. Garnish with parsley and serve immediately.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Try using rotisserie chicken or chicken thighs for more flavor.
- For a dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
